The consumption of natural products against gastrointestinal disorders has been increasing. Although there are pharmaceutical treatments, they present side effects, so new alternatives like nutraceuticals are investigated. Salvilla is used as a traditional treatment due to its bioactive phenolic content. Such extracts may be obtained by ultrasound assisted extraction (UAE) and microencapsulated to preserve them and develop a nutraceutical product. Therefore, salvilla extract was obtained by UAE and microencapsulation by spray drying (SD). Treatments were tested for yield, moisture, antioxidant activity, quantification of phenolic compounds, flow analysis, spectrometry by Raman and FTIR-ATR, extract release, and COX-2 inhibition. All treatments presented high antioxidant activity (74.8-93.4%). UPLC analysis showed a higher concentration of flavonoids than phenolic acids. Microencapsulation was confirmed, showing an inhibition of 55% of COX-2. Treatment SD8/160 showed a good protection of compounds and COX-2 inhibition. Thus, SD technology is a good option in the formulation of salvilla nutraceuticals.
