Abstract
There is ample agricultural information about the quinua, there is however, very limited data about its post-harvest treatment and industrialization. This exploratory study about the .Piartal. variety of the quinua, which is grown in the Department of Nariño, contains information about the grain after it is harvested, and aspects such as its quality, its bromatological composition, and also about the nutritional qualities of the grain, and of the flour of the raw and roasted quinua.
