Abstract

The objective of this review is to present some conservation methods that can be used to prolong the life of fresh-cut melon. Among the methods, edible coating, irradiation, natural antimicrobials, antioxidants, firmness agent, modified atmosphere, whitening, ultraviolet light and high pressure will be discussed. Depending on the method, the changes associated to minimum process of melon, such as water loss, change in color and firmness, change in the metabolism and growth of microorganisms can be reduced and the result is often dependent on the melon cultivar used.
