Abstract

Proteases containing a very large and complex group of enzymes which play important nutritional and regulatory roles in nature. Commercially they are the most important industrial enzymes, accounting for 60% of the total enzyme market. Industrial proteases are produced by fermentation using overproducing strains of Bacilli, Aspergilli, Rhizopus, Mucor and other organisms of lesser importance or by extraction of protease containing animal glands or plant tissues. Some topics discussed are the following: the production and extraction of proteases; properties of proteinases; and commercial applications of microbial proteases.
