Abstract

Child malnutrition in West Sumatra is still high at 15.4%. One of the factors of the event is the exaggeration in giving MP-ASI (Complementary Food). Lake Singkarak is the largest producer of bilis fish, kind of anchovies, and become a source of income for the local community. Aside from its delicious taste, bilis fish also contains high nutrients so that it can be used as a product of MP-ASI innovation in the form of flour. The research aims to find out the nutritional content of bilis fish flour. This research is a descriptive study by testing the content of nutrients in bilis fish flour which includes zinc, fat, protein, carbohydrates, calories, ash content, and water content in 100 grams of bilis fish flour. Laboratory test results obtained zinc content of 166.8375 mg/kg, protein 63.0%, fat 8.84%, carbohydrates 34.03%, water content 9.27%, ash content 13.74% and calories 467.68%. The high levels of Zinc in bilis fish flour are useful for increasing the metabolism of children's growth hormone, appetite, and body immune, so that children don't get sick easily., lemak, protein, karbohidrat, kalori, kadar abu, dan kadar air dalam 100 gram tepung ikan bilih. Hasil uji laboratorium didapatkan kandungan zink sebesar 166,8375 mg/kg, protein 63,0%, lemak 8,84%, karbohidrat 34,03%, kadar air 9,27%, kadar abu 13,74% dan kalori 467,68%. Kadar zink pada tepung ikan bilis cukup tinggi sehingga bermanfaat untuk meningkatkan metabolism hormon pertumbuhan anak, meningkatkan nafsu makan dan meningkatkan daya tahan tubuh agar balita tidak mudah sakit.
