Micro-encapsulation is widely used and it is not only an additive, but also is the source of new ingredients with matchless properties. Micro-encapsulation techniques were introduced in this paper in order to improve their development. According to a great amount of work about GSPE at home and abroad, this paper summarizes the methods of micro-encapsulation, the study of micro-encapsulation wall, the theories of dual-micro-encapsulation and its applications in food industry. Micro-encapsulation techniques have been applied in food field. Micro-encapsulation techniques will be developed furhter.
