Abstract

Aquaculture is the cultivation of fish that arose in China 4000 years ago and developed in Rondonia since 1980. More and more fish is sought after for its nutritional properties, which does not exempt from being a disease transmitter and pathogens such as coagulase positive Staphylococcus, Escherichia coli, Salmonella, and Listeria monocytogenes Costridium perfringens. The health legislation imposes limits on the presence of these microorganisms, with that, the microbiological analysis of food is widely used. Microbiological evaluation of food is used in the retrospective evaluation of microbiological quality or to analyze the "safety" of suspected food. The study aimed to analyze the microbiological profile of fish marketed in Rolim of Moura, with a view to public health. Samples of fish were obtained from the main fish marketing points of the city and analyzed in the Microbiology Laboratory of the Federal University of Rondônia, by methods recommended by the American Public Health Association (APHA), described in the Compendium of Methods for the Mirobiological Examination of Foods. The analysis was done by descriptive statistics. It is concluded that the fish offered in the trade of Rolim de Moura municipality did not show satisfactory results for human consumption representing a risk to public health. What is due to high bacterial count and presence of colony forming units outside the standards required by ANVISA.
