Ciri Khas dan Keunikan Telur Asin Brebes sebagai Sentra Industri Mikro

Abstract

AbstrakTelur asin merupakan salah satu kuliner yang ada di daerah Kabupaten Brebes. Brebes sendiri telah menjadi pusat utama usaha peternakan, produksi dan pengolahan telur itik. Telur asin menjadi komoditas yang khas di Kabupaten Brebes. Cara pembuatan telur asin yang unik dengan prosesnya yang cukup panjang, membuat telur asin memiliki cita rasa yang khas dari olahan-olahan jenis telur lainnya. Telur asin Brebes sendiri telah ada sejak tahun 1950-an yang pertama kali dikembangkan oleh kaum Tiong Hoa peranakan yang memang saat itu kerap mengawetkan makanan dengan cara pengasinan. Sebagai salah satu makanan yang memiliki ciri khas tersendiri, Telur Asin diangkat sebagai salah satu ikon Kabupaten Brebes hingga saat ini. Komoditas industri telur asin yang semakin berkembang kian meluas pun berdampak pada sosial ekonomi masyarakat Kabupaten Brebes sendiri. Uniknya lagi, cara pengemasan telur asin yang hingga saat ini masih mempertahankan pengemasan dengan wadah anyaman bambu, menjadi daya tarik tersendiri bagi para konsumen, baik dari dalam daerah maupun para pelancong yang hendak membeli oleh-oleh.AbstractSalted eggs are one of the culinary delights in the Brebes Regency area. Brebes itself has become the main center of livestock business, production and processing of duck eggs. Salted eggs are a typical commodity in Brebes Regency. The unique way of making salted eggs with a fairly long process, makes salted eggs have a distinctive taste from other types of egg preparations. Brebes salted eggs have been around since the 1950s, which were first developed by the peranakan Chinese community in Brebes Regency, who at that time often preserved food by salting. As one of the foods that has its own characteristics, Salted Eggs are appointed as one of the icons of Brebes Regency to this day. The salted egg industry commodity which is growing and expanding has an impact on the socio-economics of the people of Brebes Regency itself.
