Abstract

Natural flavonoid quercetin is widely distributed in fruits and vegetables. Quercetin may be therapeutically useful in the treatment and prevention of a variety of diseases, including cancer, diabetes, and cardiovascular disease, according to mounting research. The aim of the chapter is to provide information on the antidia-betic properties of quercetin. According to studies, quercetin regulates whole-body glucose homeostasis through interacting with a variety of molecular targets in the liver, pancreas, skeletal muscle, adipose tissue, and small intestine. The pleiotropic mechanisms of action of quercetin include the reduction of intestinal glucose absorption , insulin secretory, and insulin-sensitizing actions, as well as enhanced glucose utilization in peripheral tissues.
