Abstract

Bad breath is an unpleasant condition in the mouth, bad breath, and unpleasant and piercing the nose. Streptococcus mutans is an anaerobic and acidogenic bacteria that can produce acidic compounds in the teeth, so that it can cause declassification (loss of calcium) and erosion of the tooth surface which will result in dental caries (Putri M.H, 2010). One of the plants used as an antibacterial is pineapple. Pineapple parts such as flesh and skin contain chlorine, iodine, phenol and bromealin enzymes in pineapple skin (Ananas comosus L. Merr). Jelly candy, also known as soft candy, is a type of solid snack made from sugar or a mixture of sugar and sweeteners (Mufida et al., 2020). This study aims to see the effect of increasing the concentration of honey pineapple peel extract on the physical quality, effectiveness and safety of jelly candy preparations.
