Abstract
It was analyzed in this study the chemichal composition and fatty acid of traíra (Hoplias malabaricus) and pintadinho (unrated) from the São Gonçalo Channel, Southern Rio Grande do Sul, and Índia Morta, Velasquez (Rocha Department - Uruguay). The chemichal composition of the species was influenced by the local capture. The traíras captured in Índia Morta showed significantly (P > 0.05) lower content of moisture (78.65%) and significantly higher fat content (4.72%) than traíras captured in São Gonçalo. The pintadinhos captured in the São Gonçalo showed higher moisture content (82.39%) and lower protein content (14.18%) than the samples from Índia Morta. The fatty acid composition was also influenced by the capture location. The pintadinho captured in São Gonçalo showed a higher content of unsaturated fatty acids. The traíra captured in Índia Morta showed a higher proportion of unsaturated fatty acids in relation to traíra captured in Sao Gonçalo. Both traíras and pintadinhos presented as the major fatty acid content the palmitic (16:0) and oleic (C18: 1) acids. All samples showed as excellent sources of polyunsaturated fatty acids, including the presence of linoleic (C18:2) and linolenic (C18: 3) fatty acids.
