Abstract

A procedure is described that allows simultaneous identification and quantification of sucrose, lactose, glucose, galactose, and fructose by high performance liquid chromatography. A Sugar-Pak I column (Waters) at 85°C or 90°C and refractive index detector were used with double distilled water as mobile phase. The procedure was appropriate for determination of soluble sugars in fermented dairy products and has been applied to analysis of several commercial yogurts. © 1984, American Dairy Science Association.
