There is much to be learned about the influence of food and nutrition on the central nervous system. Human mood disturbance is associated with anorexia nervosa, bulimia nervosa, and binge eating. Many people eat more food when they are nervous, stressed, or depressed in order to, consciously or not, improve their moodhabitual or temporary states of feeling. In this chapter an attempt is made to show how foods or their components influence human moods by acting on the central nervous system (CNS).
