Abstract

Polewali Mandar Regency is rich in natural products, so that these natural products are often abundant. Diversification of processed natural products is one way so that the family does not get bored because of the refreshment of the menu. Besides that, diversification is also a form of preservation so that it can still be enjoyed at the next opportunity. The processed diversification certainly has economic value so that it has entrepreneurial opportunities. However, an inventory of food diversification based on local wisdom in the Mandar tribe has never been carried out so that data on this matter has never been reported. The research objective is to take an inventory of various types of traditional food based on local wisdom that have entrepreneurial opportunities in the Mandar Tribe community in West Sulawesi. The type of research is descriptive and data collection is done by observation and direct interviews with respondents to obtain accurate information so that it is easier for researchers to take an inventory of the objects studied and data analysis is carried out qualitatively. The results showed that there were six types of processed food based on local wisdom found at the research site, including Bau Peapi, Jepa, Golla Kambu, Pupuq Mandar, Loka Anjoroi and Cindolo Kacunda. The process of making or processing and the tools used in these traditional foods tend to be simple. This type of traditional food processing certainly increases the economic value of the raw material because it has a selling value and is in great demand. The six processed food products based on local wisdom by the Mandar Tribe have entrepreneurial opportunities so that they can improve the family economy.
