Abstract

A simple method is described for measuring the foaming of plant protein solutions. Foams are produced with high-speed homogenisation and the volume of foam measured after centrifuging. The method gives a linear relationship between amount of foaming agent and foam volume. The efficiencies of some anti-foaming agents were measured. © 1969 Taylor & Francis Group, LLC.
