Trends in edible vegetable oils analysis. part b. application of different analytical techniques

Abstract

This review describes recent developments in edible oils analysis by using various instrumental techniques. Different analytical methods are applied to assess oil stability but none of them is good enough. Therefore, there is still a need to develop new combined techniques to improve the quality control of edible oils.
