Abstract

Lactic acid bacteria are a promising source of polysaccharides and oligosaccharides for health, food, and nutritional applications. LAB synthesize different kinds of glucans and fructans, homopolysaccharides and heteropolysaccharide varying in molecular mass, glycosidic linkages, solubility, and degree of branching. The enzymes glucansucrases and fructansucrases are produced principally by Leuconostoc, Streptococcus. and Lactobacillus species. © 2006 Taylor and Francis Group, LLC.
