Abstract

The food inspection must ensure the hygienic quality and technology of food. Slaughterhouses provide an excellent opportunity for detecting diseases of both economic and public health. The objective of this work was to verify the occurrence of lung condemnations of cattle slaughtered under the SIF (Federal Inspection Service) in slaughterhouses in the months of March and April from 2001 to 2006 in the state of Parana. Among the 146,751 lungs of cattle surveyed in three cattle slaughter plants inspected under the SIF, in the State of Parana, 7.68% of the cattle had lung condemnations, such aspiration of blood (34.6%) and emphysema (33%) and aspiration ruminal (21.5%) and pulmonary congestion (10.9%). These data require that a new study have to be done to determine failures in slaughter line as the stunning of animals.
