Abstract

• Hazard Analysis Critical Control Point developed and remains the principal management method for reducing risk of foodborne illness. • In developed countries, food safety has begun to cast a wider net and incorporate intentional food adulteration, food fraud, and sustainability. • In developing countries, barriers to effective food safety systems include costs, a lack of surveillance programs, and limited opportunities for employee education.
