Abstract

A fuller acceptance of the Committee's views on the characteristics of the bittering compounds of hopped beers has led to a revision of the units of calculation, which are now called “E.B.C. Bitterness Units.” For the Klopper or the Brenner, Vigilante & Owades methods the calculation recommended is:— E.B.C. Bitterness Units = Extinction at 275 mμ multiplied by 50 The change from the results given previously by the different methods of calculation will only be small, since the new method gives results which lie between those given by the different previous methods. Nevertheless, for uniformity it is recommended that the change to E.B.C. Bitterness Units should be made on 1st January, 1968. 1967 The Institute of Brewing & Distilling
