Abstract Current study deals with the kinetics and mathematical modelling of osmotic dehydration of pineapple. Pineapple (Ananas comosus), 10 mm thick slices weighing 50 g each, was studied for the osmotic dehydration using hypertonic solutions of sucrose and fructose.
