Abstract
Purpose: The objective of this research was to propose a plant model for the production of Pisco in an artisanal way with quality and safety standards that Peruvian regulations and the international market demand. Design/methodology/approach: The methodology that was used is descriptive exploratory and begins with the preparation of operation and process diagrams, analysis of the processes and their respective activities, from the reception of the raw material to the shipment of the product finished; with emphasis on physicochemical and safety control points. As part of the model tools, the Muther diagram was used to establish the relationship between processes and activities. Results: With the results obtained, the proposal for the general plan of the plant is prepared. For a better understanding of the design of the plant, a 2D plan is first drawn up using Microsoft Visio professional 2016, the general plan of the plant and with the help of SketchUp the design is made in 3D to obtain an overview of the entire process. productive and be able to elaborate a model in detail. Conclusions: It can be an easy application tool for small and medium producers of Pisco and in this way obtain the denomination of origin certification.
