Abstract

Results from three experimental studies are reviewed in order to examine the relationship between the heat and mass transfer coefficients in the combined infrared and convective drying process. These results demonstrated that the heat and mass transfer coefficients in infrared convective drying verify the analogy's classical result which express their ratio in terms of the Schmidt to Prandtl number. In addition the effect of high mass transfer rates on the heat and mass transfer coefficients is shown to be taken into account through the use of the boundary layer theory.
