Abstract

We analyzes the different stages in the dehydration of fruits and vegetables. It was found to vary from a lettuce: as a sharp drop at low temperature, (arround 150 °C) to five stages in total, with a loss almost continuous to about 300 ° C, such as grapefruit, papaya and fig.
