Abstract

The insect industry is rapidly emerging these last years. If the main product of this industry is the protein meal, used mainly for feed and food applications, only a few work has been done on the main co-product of this industry, the insects' oils. However, these oils deserve all our interest, as they present very interesting characteristics and particularity depending on the origin and feed source of the producing insect. In this short review, we are discussing different aspects of these products biosynthesis, composition and potential applications.
