Abstract

Dans ce travail on étudie l'activité de suspensions bactériennes responsables de la fermentation malolactique des vins, on décrit les méthodes de purification d'extraits bactériens catalysant cette transformation. On a vérifié l'existence d'une enzyme malolactique particulière assurant la transformation du malate en lactate sans intervention des lacticodéshydrogénases. +++ The activity of bacterial suspensions responsible for malolactic fermentation in wines was studied. Methods of purification of bacterial extracts which catalyse this transformation are described. The existence of a particular malolactic enzyme which ensures the conversion of malate into lactate without the intervention of lactate dehydrogenases was shown.
