Abstract

Starch is an important source for the body. Based on the digestibility, starch can be classified into 3 types, Rapidly Digested Starch (RDS), Slowly Digested Starch (SDS) and Resistant Starch (RS). SDS have been attract the attention of reserachers because its ability to digest slowly, making the glucose release into the blood longer so it has a low glycemic index. Various modification methods have been developed to maintain and even increase SDS in starch. Modification that generally used is physical methods, namely Heat-Moisture Treatment (HMT). Although it was found decreased level of SDS in corn starch, the effect of HMT modification can also change the type of crystalline starch to A-type which is considered to have characteristics that are digested slowly, although for some type of starches with C-type crystalline remain unchanged. Observation under a microscope, HMT modified starch granules changes with the holes on the surface which indicates the level of porosity. Porosity changes with regard to the increasing accessibility of amylase enzyme that effect on digestibility changes. HMT generally proved to be one of the effective methods in modifying the starch content of the SDS through mechanism of changes the crystalline type and surface porosity of starch granules.
