Abstract

Light scattering in near infrared spectroscopy is an important phenomenon when using fluid milk. Experiments were carried out to measure the absorption of a near infrared overtone band of water in condensed milk by transmission at a wavelength of 1.45 μm in order to determine water content in condensed milk. Homogenization at high pressure and baseline correction of spectra permitted a linear relation between water content in milk and the absorption measured. © 1991, American Dairy Science Association.
