Abstract

The extent to which time for milk coagulation is linear with the inverse of enzyme activity was investigated. The Formagraph can be used to measure time for coagulation of milk over a range of rennet activity. Linearity of coagulation time versus inverse of enzyme activity exists within the range of concentration .0011 RU/ml to .16 RU/ml, which represents relative variation in rennet activity of 1:140. © 1983, American Dairy Science Association.
