Review: Effects of edible coating on fresh-cut fruits

Abstract

Fresh-cut fruits have a shorter shelf life due to its perishable nature. Edible coating being biodegradable and environmental friendly, provides protective covering to fresh-cut fruits. This review covered the effects of edible coating on fresh cut fruits, i.e., apple, apricot, banana, kiwi, mango, papaya, pineapple, strawberries, watermelon and melon. It was observed that edible coating positively affected weight loss, titratable acidity, ph, firmness, shelf life, color, respiration rate and microbial load in fresh cut fruits. Shelf life of all fresh-cut fruits was significantly enhanced by edible coating. Being pre-processed products, it also reduced the time required for cutting fruits. Sensory scores were also acceptable for edible-coated fruits.
