Abstract
15N-NMR spectroscopy, particularly INEPT procedures, were used to characterize com. pyrazines (Maillard reaction products). The samples examd. included: 2-chloro-3-methylpyrazine with another isomer (5- or 6-methyl-) as a minor impurity; 2-chloro-5- or 6-methylpyrazine; 2-methoxy-6-methylpyrazine; 2-methyl-3-propoxypyrazine; 2-methyl-6-propoxypyrazine; and 2-acetyl-3,6-dimethylpyrazine plus 2-acetyl-3,5-dimethylpyrazine.
