Abstract

The inhibitory effect of isolated β-lactoglobulins A, AB, and B on dephosphorylation of various caseins by milk alkaline phosphatase was confirmed. There was clear distinction between β-lactoglobulin polymorphs as inhibitors. Milk alkaline phosphatase activity was inversely related to the number of phosphate groups in caseins. Whole casein was the least susceptible substrate, however. No relationship was between free phosphorus content and milk alkaline phosphatase activity or between β-lactoglobulin phenotype and activity of milk alkaline phosphatase in milk of individual cows. © 1985, American Dairy Science Association.
