Abstract

Este estudio explora Factores de Éxito (FE) relacionados a la calidad de procesos en la industria alimentaria con base en Lean Six Sigma (LSS), que consiste en una metodología de vasta utilidad para mejorar la eficiencia y productividad en procesos industriales. El objetivo principal fue analizar los FE de LSS en la industria alimentaria mediante una revisión exhaustiva de la literatura y un resumen meta-analítico. Se incluyeron investigaciones publicadas entre 2008 y 2017. Con el fin de enfatizar la evolución cronológica de LSS en este ámbito, dos periodos de 5 años cada uno fueron considerados. De esta forma, 110 trabajos fueron analizados y 22 de los factores con mayor frecuencia de citación fueron considerados como los principales FE en la industria alimentaria. Finalmente, se propuso una clasificación de los factores seleccionados en tres grupos: los que aumentaron, disminuyeron y se mantuvieron constantes en los dos periodos considerados.This study explores success factors associated to process quality in the food industry based on Lean SixSigma (LSS), which consists of a useful methodology that leads to improvements of both efficiency and productivity ofindustrial processes. The objective was to conduct an exhaustive literature review and a meta-analytical summary. Studiespublished between 2008 and 2017 were included. In order to emphasize the chronological evolution of LSS in this field,two periods of 5 years each were considered. Therefore, a total of 110 works was analyzed and 22 of the most frequentlymentioned factors were considered as the main success factors. Finally, a classification of the selected factors in threegroups was proposed: those that increased, decreased and remained constant in the two periods considered.
