Abstract

The thermophysical properties of cuttlefish: moisture content, density, equilibrium freezing temperature, thermal conductivity, and specific heat were determined. The relationship between surface heat transfer coefficient and air velocity was also determined. A numerical model for freezing time prediction was developed. The freezing times calculated were compared with the experimental values and those calculated from the simplified analytical models, which were Plank model, IIR model, Cleland and Earle model, and the modified Pham model. The results showed that the developed numerical model gave the best prediction with 1.5% average error.
