Abstract

Pengendalian kualitas merupakan hal yang penting dan perlu dilakukan oleh perusahaan untuk mengurangi produk yang cacat. Salah satu industri pangan terkenal yang bergerak di bidang makanan ringan biskuit adalah PT GF. Dalam mempertahankan kualitas produk dengan mengidentifikasi penyebab kecacatan produk X di PT GF, maka dapat digunakan metode Six Sigma dengan pendekatan DMAIC (Define Measure Analyze Improve Control). Penelitian ini bertujuan untuk mengendalikan kecacatan pada kemasan produk X. Berdasarkan hasil penelitian ini didapatkan jenis cacat kemasan produk tertinggi dari 10 jenis cacat adalah gaset melipat yaitu sejumlah 300 pcs dengan persentase 60,61%. Faktor penyebab terjadinya kecacatan produk adalah faktor manusia yaitu adanya perbedaan kompetensi setiap operator saat setting baut gaset di mesin packaging. Faktor material disebabkan oleh kualitas bagian terdalam roll alufo kurang bagus. Faktor mesin disebabkan oleh tumpulnya cutter pada mesin packaging. Faktor metode disebabkan oleh metode pengecekan WIP alufo oleh Quality Control (QC) kurang teliti. Usulan perbaikan yang dapat dilakukan adalah mengadakan training rutin untuk operator mesin packaging agar lebih memahami work instruction khususnya mengenai tata cara setting pada mesin packaging serta penataan tray di mesin tray loader. Selain itu, perlu dilakukan pengecekan QC secara teliti dan sesuai dengan tahapan yang tertera pada work instruction. Untuk meminimalisir terjadinya kecacatan maupun error pada mesin packaging, maka diperlukan maintenance secara berkala serta setting ulang agar mesin dapat berjalan dengan lancar.ABSTRACT Quality control is important and needs to be done by companies to reduce defective products. One of the well-known food industries engaged in biscuit snacks is PT GF. In maintaining product quality by identifying the causes of product X defects at PT GF, the Six Sigma method can be used with the DMAIC (Define Measure Analyze Improve Control) approach. This study aims to control defects in the packaging of product X. Based on the results of this study, it was found that the highest type of product packaging defect of the 10 types of defects was folded gaskets, namely 300 pcs with a percentage of 60.61%. Factors causing product defects are factors humans, namely the difference in competence of each operator when setting the gasket bolts on the packaging machine. The material factor is caused by the poor quality of the inner part of the alufo roll. The engine factor is caused by the dullness of the cutter on the packaging machine. The method factor was due to the inaccuracy of the alufo WIP checking method by QC. Proposed improvements that can be made are to conduct routine training for packaging machine operators to better understand work instructions, especially regarding procedures for setting the packaging machine and arranging trays on the tray loader machine. In addition, it is necessary to carry out QC checks carefully and in accordance with the stages stated in the work instructions. To minimize the occurrence of defects and errors on packaging machines, periodic maintenance and resetting are needed so that the machine can run smoothly. Keywords : packaging, defects, six sigma method, DMAIC
