Abstract

New branched unsaturated and saturated aldehydes and related alcohols were identified in a solvent ssextract of freshly grated lemon peel by GC/MS-analysis: (E)-2-methyl-2-heptenal, (E)-2-methyl-2-nonenal, (E)-2-methyl-2-undecenal, 4-methyl-nonanal, 4-methyl-undecanal, 4-methyl-nonanol and 4-methyl-undecanol. Their structures, established from their mass spectra, were confirmed by synthesis and the organoleptic descriptors are given. Copyright © 2006 John Wiley & Sons, Ltd.
