Abstract

An indirect method to measure the reaction of glucono delta lactone with protein was developed. Glucono delta lactone reacts with lysine, tyrosine, threonine, arginine, and serine residues of protein, protecting them from attack by nitrous acid. © 1985, American Dairy Science Association.
