Abstract

Coffee is one of the basic products in the international market, it has become an important lifestyle for the main consuming countries, which is why the best suppliers are required to satisfy the export markets. Due to the amount of trade generated by coffee in Honduras, both in the national and international markets, it becomes extremely important to establish standardized quality management systems that allow the evaluation of its physicochemical characteristics, so that it can be valued in an appropriate way. fair at the time of establishing its marketing price, so the objective of this research is to analyze the quality systems applied to Honduran coffee and its impact on price. In this literary review, it analyzes the variable quality and price systems, applied to coffee, the search for information is taken with a temporality of 10 years ago, with a total of 50 articles. After reviewing the different studies, a standard for quality management systems applied to coffee is not presented, but rather a quality analysis of the product. The valuation at the price of coffee is mostly carried out by what the international coffee organizations dictate, the investigations that were analyzed do not propose any method.
