Abstract
Mashua is a tuber of high Andean origin likepotatoes and goose, they come in a wide variety of colors (cream, yellow, black, purple, white, pink), and they have a large amount of carbohydrates, proteins, vitamins and a high nutritional value that includes phosphorus, iron and calcium. Its consumption can be given in different ways, it can be said that it needs to be in the sun, such as sweet potatoes to obtain a more pleasant flavor. Its antioxidant capacity lies in its anthocyanin content, which has a higher content in the purple mashua species, itis very good for those who suffer from cardiovascular problems due to its content in vitamins of complex C and E, on the other hand, mashua helps to improve visual acuity, help fight anemia and eliminate kidney stones, it is also well known for its anticancer capacity. The objective of this work was to gather information on the nutritional value, the bioactive compounds,and the beneficial properties of Peruvian mashua from the point of view of health,itis also advisable to continue studying and researching its great antioxidant power.
