CARACTERIZAÇÃO DA FIBRA DIETÉTICA OBTIDA DA EXTRAÇÃO DO SUCO DE LARANJA

Abstract

RESUMO Resíduos da extração do suco de laranja são descartados diariamente em grandes quantidades ao meio ambiente. Apesar de o Brasil destacar-se como o maior produtor mundial de laranjas, existem poucos dados disponíveis sobre os subprodutos cítricos e o aproveitamento das cascas e da polpa da laranja, encontra-se atualmente restrito à produção de ração animal e de pectina comercial purificada. A polpa da laranja é potencialmente uma excelente fonte de fibras dietéticas insolúvel e solúveis, sendo a mais conhecida delas a pectina, muito utilizada na indústria de alimentos como espessante. Neste trabalho a fibra dietética desidratada foi obtida de laranja pêra e valência após a extração do suco, e apresentou um teor de umidade de 9,28%, pH de 3,47, 23,6 % de pectina, 47,9 % de fibras insolúveis e 20,7 % de fibras solúveis. A caracterização da fibra dietética de laranja foi realizada para granulometrias de 30 e 50 μ , as quais apresentaram capacidade de retenção de água de 6,63 e 8,95 g água/g fibra, respectivamente, demonstrando que quanto maior o tamanho das partículas, maior a capacidade de reter água. A capacidade de estabilidade da emulsão crua foi de 77,60 e 77,64%, para granulometria de 30 e 50 μ , respectivamente, e para a estabilidade da emulsão cozida foi de 36,52 para ambas as granulometrias. Estas características sugerem um grande potencial de aplicação como agente de geleificação, consistência, textura e rendimento, podendo reduzir calorias, como ingrediente em formulações de produtos alimentícios. CHARACTERIZATION OF DIETARY FIBER FROM ORANGE JUICE EXTRACTION ABSTRACT Residues from orange juice extraction are discarded daily in hight quantity to environment. Dispede being the biggest world orange produter, in Brazil there are a litter available dates about the citricus subproducts and the orange pulp and few available data about the citricus subproducts and the use of orange peels and pulp, at the moment this is only used to animal ration and commercial purification pectin. The orange pulp is potentiallity a source of soluble and insoluble dietary fiber, the most acquaintance is the pectin, it is used a lot on food industry as thickener. In this work the dry dietary fiber was obtained from pear and Valencia orange kind after juice extraction, and showed 9,28% of moist, 3,47 of pH, 23,6% of pectin, 47,9% of insoluble fiber and 20,7% of soluble fiber. The orange fiber caracterization was made to 30 and 50 μ granulation, that resulted in water holding capacity (WHC) 6,63 and 8,95 g water /g fiber respective, showing that the bigger the granulation, the bigger is the WHC. The emulsion estabilization capacity was 77,60 and 77,64%, to 30 and 50 μ granulation, respective, to cooked emulsion estabilization capacity was 36,52% to both granulation. This caracterization suggested many potential to application to thckener, gelling, texturizer, yield agent and can be low calories as ingredient in food formulation.
