Abstract
Honey derived from Japanese linden floral source was analyzed, and trehalulose was detected, identified, and obtained in 2.5% yield in total solids. Honey from 6 other floral sources, i.e., Chinese milk vetch, false acacia, Japanese horse chestnut, Citrus unshiu, red clover, and buckwheat contained 0.5-2.0% trehalulose in total solids.
