Abstract

Tofu is traditional Indonesian food that’s made from soybean. The process of tofu produced solid and liquid waste that can cause environmental contamination. Designing clean production in tofu industry needs to be done in promoting environmental-friendly industry. This research was aimed to design alternative application of clean production by using 5R (Re-think, Reduce, Reuse, Recycle, Recovery) approach through data collection, problem identification using mass balance, fishbone and clean production design using 5R. The results showed that the processing of tofu based on the mass balance data yields 18 Kg solid waste and 158 kg  liquid waste. Problem identification using fishbone showed attributing factors were human (water inefficiency usage, lack of accuracy in addition of material), machine (blunt rolling stone, old machinary), material (low quality of soybeans, unregenerated whey) and method (improper washing time). Clean production alternatives that can be applied in UD. Usaha Berkah included Re-think (routine maintenance and repairation of machinery, cooperation with raw material suppliers), Reduce (raw material sortation, efficiency in water utilization), Reuse and Recycle (waste utilization as raw material for biogas manufacture and tempe gembus) and Recovery (utilization of soybean dregs as animal feed, reutilizing whey in production).
