Abstract

A highly significant correlation was demonstrated between the concentration of the starch granule protein called friabilin and the flour particle size in wheat Norin cultivars. In the Norin cultivars with a faint friabilin band, the mean specific surface area (SSA) value was 1,680 cm2/g and the endosperm texture was hard, whereas in those with a prominent band the mean SSA value was 3,250 cm2/g and the endosperm texture was soft.
