Abstract

This paper presents a simple design of the pyrolysis tool for making liquid smoke from shells and rubber seeds as a food preservative. Herein, one may use any raw material, such as organic materials that contain cellulose for making liquid smoke. Although there have been many similar studies conducted, nevertheless none of this study using shells and rubber seeds as raw materials to make liquid smoke been done before. The research method was pyrolisis using shell and rubber seeds on a temperature of 400° C for four hours. The purification of liquid smoke is by filter paper and distilled at 200° C temperature. There is a various concentration of %, 8%, and 10% when the dilution of liquid smoke obtained from distillation applied to Nile tilapia. Even so, the best results from this study were at a concentration of 6% for 7 hours with a final total plate number of 3 x 102 CFU/g and a pH value of 6.
