Abstract

Homogenized milk can be analyzed for fat by light scattering with the same apparatus used for protein determination by dye binding. A separate standard curve may be needed for each homogenizer, since the slope of the curve when absorbance is plotted against per cent fat depends on the homogenization efficiency. © 1969, American Dairy Science Association.
