Abstract

Abstract Virgin Coconut Oil (VCO) emulsion is a product made by mixing VCO and water using an emulsifier. Making VCO emulsion that is stable and acceptable to consumers will benefit industries that produce VCO. Research on the effect of homogenization time and speed on the physical and chemical properties of VCO-orange juice emulsion using gum arabic emulsifier has been conducted. Emulsion was made by mixing VCO and orange juice (9: 1) and 0.75 percent arabic gum emulsifier. The homogenization process was carried out for 2, 4 and 6 minutes at a speed of 5000, 10000 and 15000 rpm. The resulting emulsion was determined for its stability and viscosity. The best time to produce a stable product is 4 minutes and the homogenization speed is 15000 rpm. The resulting VCO emulsion has a viscosity of 52.5 cP and is stable at room temperature.
