Abstract

Microencapsulation is one of the quality preservation techniques of sensitive substances used in food and pharmaceutical industries. The process is practiced so far by many methods. Spray drying and Freeze drying are widely used methods. Spray-freeze-drying is relatively a newer technique that involves spraying a solution into a cold medium and removal of solvent (water) by conventional vacuum freeze drying method. The present study highlights the various aspects and previous study which have been carried out using spray freeze drying method in encapsulation.
