Abstract
Abstrak: Kopi merupakan salah satu komoditas perkebunan unggulan Indonesia yang memiliki nilai ekspor tinggi dan memberikan devisa cukup besar bagi negara. Di Indonesia terdapat dua jenis kopi yang berkembang, yaitu kopi arabika (Coffea arabica) dan kopi robusta (Coffea canephora). Selain itu di Indonesia juga dikenal yang namanya kopi luwak. Kopi luwak merupakan kopi yang dihasilkan dari proses fermentasi alami dalam pencernaan hewan luwak. permintaan akan kopi luwak terus meningkat, akan tetapi yang menjadi kendalanya ialah produksi kopi luwak selama ini hanya mengandalkan hewan luwak saja sehingga sulit diproduksi dalam skala besar. Oleh karena itu diperlukan adanya alternatif fermentasi kopi luwak, salah satunya menggunakan inokulum feses luwak. Pada penelitian ini dilakukan fermentasi biji kopi dengan penambahan inokulum feses luwak dengan konsentrasi yang berbeda yaitu 0%, 5%, 10%, 20% dan 40%. Parameter yang diamati pada penelitian ini ialah kadar air dan kadar kafein. Hasil penelitian menunjukkan bahwa karakteristik kimia biji kopi fermentasi menggunakan inokulum feses luwak 0%, 5%, 10%, 20% dan 40% adalah sebagai berikut: kadar air setelah fermentasi yaitu 60.26%, 62.57%, 69.27%, 67.57% dan 73.56%.Fermentation Arabica Coffee (Coffea arabica) with a Batch System using Civet Fecal InoculumAbstract: Coffee is one of Indonesia's leading plantation commodities that has a high export value and provides considerable foreign exchange for the country. In Indonesia there are two types of coffee that develop, namely arabica coffee (Coffea arabica) and robusta coffee (Coffea canephora). In addition, in Indonesia is also known as civet coffee. Civet coffee is coffee produced from the natural fermentation process in the digestion of civet animals. The demand for civet coffee continues to increase, but the obstacle is the production of civet coffee so far only relying on civet animals only so that it is difficult to produce on a large scale. Therefore, there is a need for an alternative to fermented civet coffee, one of which uses a luted fecal inokulum. In this fermentation was carried out with the addition of luwak fecal inocuses with different concentrations of 0%, 5%, 10%, 20% and 40%. The parameters observed in this study is water content. The results showed that the chemical characteristics of fermented coffee beans using 0%, 5%, 10%, 20% and 40% stool inoculums are as follows: the water content after fermentation is 60.26%, 62.57%, 69.27%, 67.57% and 73.56%.
