Abstract
Over the last years (2008-2019), the most employed and innovative techniques for the analysis of triacylglycerol composition are presented and discussed in this article. Determining the composition of these molecules is of great importance since they are the main components of naturally occurring oils and fats and are products of great industrial and commercial interest. The application of oils and fats is closely related to the composition of these triacylglycerols in terms of fatty acids, having the chromatographic analysis techniques as the main and most used for the determination of this composition, with reversed phase high performance liquid chromatography and others techniques derived from it being the most employed.
