Abstract

Electrochemical analysis is the most noteworthy method to evaluate antioxidant capacity, as it may allow simple, low-cost, and quick execution based on a redox process. This study aims to compare one multi-floral and two mono-floral honey varieties with additional substances, royal jelly and propolis, using spectrophotometry methods and electroanalytical methods. Two electroanalysis techniques were used to evaluate antioxidant capacity: cyclic voltammetry (CV) performed with a scan rate of 50 mV/s and differential pulse voltammetry (DPV) with a pulse amplitude of 50 mV and a scan rate of 10 mV/s. All samples were analyzed by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) microplate method. The electrochemical results were successfully confirmed by similar DPPH measurements. The results suggest that the electrochemical method is an effective method for antioxidant analysis of honey samples.
